Flavoured pastas are very difficult to produce and we have thrown out much pasta in order to create a product which yields the best results when it comes to taste and consistency. In achieving these products we do not use artificial colours or flavours. We use only the finest dried ingredients and essential oils. As for the lemon flavoured pasta, the juice and oils from the Sicilian lemon gives this pasta a truly incredible taste.

Traditional Tuscan Pasta
These pastas are made with all natural, fresh ingredients. No preservatives or additives or color. The handmade process of drying the pasta takes 52 hours (compared to 16 hours used for commercially made pastas) which creates the best results during cooking. This process also guarantees great taste and consistency, enhanced only by the use of traditional sauces, or "in bianco" to enjoy the pastas true taste.The pasta is shaped using old bronze forms which give it the traditional italian shape. Again, the importance of using bronze forms is evident in the taste. In fact, the pasta comes out of the forms with ridges on one side. This holds the sauce much better but also gives it it's unique taste. Our pastas need only 15 minutes to cook before they are ready to enjoy. This is also an indication of their higher quality.

Our Private Selection Oil comes from the hills of Chianti in the borough of San Casciano, a land of great wines and superb oils. Without any false modesty we can define our oil as a great oil, a real, rich product with such a strong perfume and taste that we don't recommend it for cooking fish unless you like very strong flavours. The olive species used are those typical of Chianti, but with a prevalence of the highly esteemed Frantoio olives, coupled with the Moraiolo and Leccino varieties. The oil is cold-pressed so as to respect the intrinsic characteristics of the olive, the absence of filtration moreover, ensures a unique and unmistakable taste.

Cantuccini are a famous little dipping cookie from Prato, a city near Florence in Tuscany. There are several variations of these and many ways of doing them. Some require the cookie to be baked twice, like the typical Italian biscotti, or "twice-baked" cookie. Some call for a little almond extract, some for anise, some for anise seed, etc. They all, however, are traditionally dipped in Vin Santo, a sweet dessert wine similar to Marsala or Sherry, and you may substitute either for the Vin Santo, although Vin Santo has a little more fire to it, and to my taste, is far preferable.

Chestnuts

Delicious pur'ees and sweet smelling roast chestnuts. The pur'ees are made from a very special variety of chestnut called Marrone di Caprese Michelangelo, native to the great artist's town. The cooked and shelled chestnuts are reduced to a pur'ees which the various other ingredients are added to. The roast chestnuts are cooked according to tradition on a chestnut fire, once shelled they are put into jars and immersed in liquid.

* All the products are inspected and certified as Organic Farming Products and come from the Tuscan Apennines, more precisely from the area of Pratomagno.

This sweet syrup is obtained from an ancient variety of rose petals. Cultivated in the Chianti Classico region without the use of herbacides or pesticides. Ideal for gift giving. In fact it is the equivalent of giving fifty red roses because that is how many it takes to make one bottle of syrup. The rose petals are immersed in water and sugar. Nothing else is added.

This product can be used to sweeten beverages, hot or cold. Or to prepare non-alcoholic aperitifs. It can also be used over plain yogurt, cakes and ice cream, or simply in water to add flavour.
